Well, I guess I'm nesting. I don't know if it's the cold weather or wacko hormones, but I am cooking and cleaning with the best of them. [No, I AM NOT pregnant. Before any of those rumors get started.]
Today I woke up and made breakfast for the "family." Chris came over and so did our friend Josh, who we affectionately call "Chris's other girlfriend." Josh is great. He'll be going off to the Coast Guard in June so I like to hang out with him a little extra since he'll be living in Alaska soon.
For breakfast I decided omelets just weren't enough. So I went to the store at 9 am to get the items that I needed to fill in the gaps. We had omelets with green & red bell peppers, mushrooms, ham, green onions, orange-pineapple juice, hot flaky biscuits with spreadable grape fruit and, of course, perfectly cut pats of butter. When I was at the store, I also decided I wanted to make cookies. I got enough stuff to make 2 batches of lemon cookies. These cake cookies are light & fluffy and are so yummy. You can even freeze them after they're baked and get them out later. I'll post this recipe too.
