1 box of lemon cake mix
2 eggs
8 oz whipped topping (Cool whip)
Powdered sugar
Mix cake mix and eggs until crumbly. Add whipped topping until completely blended. Cover and refrigerate for 30 minutes. Teaspoon into powdered sugar and roll into balls. Flatten onto greased cookie sheet. Bake at 350° for 8 minutes. Baked cookies are freezable.
Note: The rise time in the frig is a must. I tried to skip that step once but they just don't turn out without that time. I have also tried other flavors of cake and strawberry works ok but it's not very good. Chocolate really doesn't work. Now I always stick with lemon because they are consistently delicious.
