Super Yummy Pasta Salad

I make pasta salad all the time. It's one of those easy things that you can take to work for lunch that's tasty and healthy. Well, definitely healthy and sometimes tasty. Sometimes not.

Tonight I made my favorite pasta salad yet. I'm posting the ingredients in case anyone else is interested or in case I forget where I stored the recipe.

Note: All amounts are guesstimated as I never measure anything when making pasta salad. I just throw it all together and eat.

2 cups cooked whole wheat pasta

1 cup cooked black-eyed peas

3 tablespoons olive oil

1 tablespoon kosher salt

1 cup cut fresh spinach

2 cloves garlic

¼ cup chopped green olives

1 tablespoon lime juice

¼ cup chopped fresh cilantro

¼ cup chopped fresh chives

½ cup peas

12-15 cherry tomatoes, quartered

choice of cheese for topping prior to serving

Mix and EAT!
